Ingredients:
- 5 oz. cherry tomatoes, halved
- 1/8 cup red onion, diced
- 1 small bell pepper, diced (any color will do, yellow is my favorite)
- 4 garlic cloves, minced
- ½ cup salt-free or low sodium pasta sauce (I’m working on a homemade recipe)
- 1 tsp Italian seasoning
- Whole wheat noodles (look at the ingredients on the back of the package for "bleached" or "enriched" those are two things you DO NOT want in your food)
Directions:
Prepare noodles according to
package and set aside. In a medium frying pan, sauté tomato and bell pepper in
1 tbsp pasta sauce over medium heat for 3 minutes. Add red onion and garlic and
sauté for 2 minutes. Stir in the rest of the pasta sauce and the seasoning.
Reduce heat to med-low and continue to stir until hot. Divide & combine
noodles and sauce and serve. Delish!
Sometimes I like to make mine a little spicy by
adding 1 tsp sriracha sauce & 1 tsp red pepper flakes… gives it a nice
kick.
